Sole is a common term given to a wide variety of flatfish; however, strictly speaking, genuine soles belong to the family Soleidae. There are approximately 30 genera and 130 species of soles. You can go diving with sole fish in temperate and tropical seas worldwide, but you can find the highest concentration along the coastline of Europe and North America.

Cousins to the popular flounder fish, sole exhibit the same characteristics with their flattened bodies and eyes that migrate to a single side of their head. Some soles have a round body shape, and some are more elongated. Some soles can grow reasonably large, like the European Dover sole, which can reach lengths up to 50 cm (20 inches).
